Whole Grain Oat Pilaf

Oats aren't just for breakfast! Oatmeal at the start of a day is an excellent dietary choice, but this delicious pilaf is another great way to incorporate high-fiber, cholesterol-lowering oats into your diet later in the day.

1 cup whole oat groats
1 large onion chopped
1½ cups sliced mushrooms
¼ cup chopped parsley
1 teaspoon olive oil
15 oz. vegetable broth
Fresh ground pepper

Heat olive oil in a medium saucepan and stir in the oat groats. Cook until they begin to toast.

Add the onion and mushrooms and cook about 5 minutes until soft.

Add the broth and pepper. Bring to a boil, reduce heat, cover and simmer for about 40 minutes, stirring occasionally. 

Remove from heat and stir in chopped parsley.

Makes 6 servings.
