Summer Fruit Salsa

This recipe is a great way to use the wide variety of fresh fruits and vegetables during summer and make a great appetizer as well as topping for grilled meats.  Feel free to add or remove any fruits as blackberries, raspberries, pineapple, and peaches are just some other great options to include in this fruit salsa. 

2 cups tomatoes, chopped
¾ cup red bell pepper, chopped
¾ cup green bell pepper, chopped
¾ cup red onion, finely chopped
1 cup mango, chopped
¾ cup strawberries, chopped
1 kiwi, peeled and chopped
1 medium nectarine, chopped
½ cup cilantro, chopped
1 Tbsp. olive oil
1 Tbsp. orange juice
Pepper to taste

Combine tomatoes, bell peppers, onion, mango, strawberries, kiwi, and nectarine in a large bowl.  Add olive oil, orange juice, salt and pepper to taste and mix well.  Stir in cilantro.  Cover and refrigerate for 30 minutes to 1 hour.  Serve with tortilla chips or on grilled chicken or fish.

Makes 22 servings (1/4 cup salsa)
