Braised Fresh Spinach & Mushrooms

vegetable oil cooking spray
½ c diced onions, Vidalia when available
1 Tbsp diced garlic
8 oz fresh mushrooms, sliced
10 oz fresh spinach leaves
fresh ground pepper 
Balsamic vinegar

1. Spray a large nonstick skillet with the vegetable oil spray.
2. Place over medium-low heat.
3. Place garlic, onions, and mushrooms in skillet and sauté.
4. Add spinach leaves.
5. Cover and cook over low heat 3-4 minutes.
6. Wilts to 2 servings.
7. Serve with Balsamic vinegar drizzled as desired.
8. Garnish with fresh ground pepper.
