Lemon Pudding

Have you been wishing for a low calorie lemon pudding?    Now you can make it easily!

Serves 5.

1 box (2.9 oz) Lemon Flavor Jell-O Cook & Serve Pudding & Pie Filling
1/2 cup Splenda®
1/4 cup water
1/4 cup egg substitute
2 cups water
· Stir dry mix, Splenda, ¼ cup egg substitute and ¼ cup water with whisk until smooth. Stir in 2 cups water
· Continue to stir constantly with wire whisk, cook on medium heat until mixture comes to a full boil.
· Pour into (5) dessert dishes.  Serve warm or chilled with fat-free whipped topping.

Calorie Free Meringue (if desired)

Calories, fat, and carbohydrates are negligible.  Serves 5.  Enjoy.

· Beat 2 egg whites in large bowl with electric mixer on high speed until foamy
· Gradually add 3 Tablespoons of Splenda, beating until stiff peaks form.
· Spread over filling in ovenproof custard cups to edges of cup.
· Bake at 350° for 10-15 minutes or until meringue is lightly browned.  Cool. Store in refrigerator.
