Bean Dip - The Seven Layer Way

This tasty appetizer has been made with a variety of healthy ingredients.  The refried beans are fat free and yet rich in protein and fiber.  The fat free sour cream adds color, flavor and texture without the extra fat.  Enjoy the veggies of your choice.  You could also add roasted corn and/or rinsed black beans for that southwestern flavor.

1 can (16 oz) fat free refried beans
1 Tbsp taco seasoning mix
1 cup fat free sour cream
1 cup salsa
1 cup shredded lettuce
1 cup 2% shredded cheddar cheese
½ cup chopped green onions
2 Tbsp sliced pitted ripe olives

Combine the refried beans and taco seasoning mix together. Mix well. Spread onto bottom of 9” pie plate. Layer remaining ingredients over the bean mixture. Refrigerate until serving. Serve with baked pita or tortilla chips or whole grain crackers.
